Pear Elderflower French 75: New Year’s Eve Cocktail Recipe

Updated: 2 days ago

Pear elderflower French 75 still life. Champagne flute with pear slice beside a bottle, pears, and lemons on a marble table, in a warm glowing festive setting

A Sparkling Pear Cocktail Worthy of Midnight

Some celebrations call for a drink that feels as hopeful as the moment itself. This Pear Elderflower French 75 brings together botanical gin, delicate elderflower, soft pear nectar, and fresh lemon, finished with a lively pour of brut sparkling wine. It is elegant enough for a midnight toast, refreshing enough for appetizers, and perfectly suited to a fall or winter gathering.

Pear adds gentle seasonal sweetness, while elderflower lifts the cocktail with floral notes without turning it into a heavy dessert drink. Fresh lemon keeps the flavors bright, and dry bubbles make every sip feel celebratory. A thin pear slice or fragrant lemon twist is all the finishing touch it needs. The wine and glassware provide the sparkle—no elaborate garnish required.

Whether your New Year’s Eve plans include a dinner party, a dressed-up gathering, or a quiet countdown with your favorite people, this recipe offers three ways to celebrate: a single cocktail, a batch for 25 guests, and an alcohol-free pear elderflower remix. Prepare the ingredients before the festivities begin, save the bubbles for the pour, and leave yourself time to enjoy the evening.

Flavor Profile

Soft Pear, Floral Elderflower, and Crisp Bubbles

The first sip blends gentle pear sweetness with elderflower’s delicate floral aroma. London dry gin adds juniper and botanical structure, while fresh lemon cuts through the nectar and liqueur for a clean, lively finish. Brut sparkling wine brings acidity and effervescence that keep the drink light on the palate. Depending on the wine, you may notice subtle apple, citrus, or bready notes underneath the fruit. Expect a softly fruity, floral sparkling gin cocktail with a bright finish; sweetness will vary depending on your pear nectar and elderflower liqueur.

Yield: 1 cocktail.

Prep time: 5 minutes, with sparkling wine and ingredients chilled and ready.

Measurement summary: 2½ US fl oz still base + 2½ US fl oz sparkling wine = 5 US fl oz (approx. 148 mL) before shaking dilution.

Glassware: Chilled flute, tulip glass, or coupe with at least 7–8 fl oz capacity to allow for dilution and foam.

Single Serving Recipe

Ingredients

  • 1 oz London dry gin (approx. 30 mL).

  • ½ oz elderflower liqueur (approx. 15 mL).

  • ½ oz pear nectar (approx. 15 mL).

  • ½ oz fresh lemon juice (approx. 15 mL).

  • 2½ oz chilled brut sparkling wine (approx. 74 mL).

  • Thin pear slice or lemon twist, for garnish.

  • Ice, for shaking.

Instructions

  • Chill your serving glass. Gently shake or stir the pear nectar in its container before measuring.

  • Add gin, elderflower liqueur, pear nectar, and fresh lemon juice to a cocktail shaker.

  • Add ice and shake for 10–15 seconds, until cold.

  • Fine-strain into the chilled glass.

  • Slowly top with 2½ oz chilled brut sparkling wine. Give one gentle stir to combine.

  • Garnish with a thin pear slice, or express a lemon twist over the glass and add it. Serve immediately.

Ingredient and Serving Tips

Use pear nectar as written; clear pear juice makes a lighter drink. Nectar may make the finished cocktail slightly cloudy, which is normal. Champagne, dry Cava, or brut Prosecco can work as the sparkling finish; choose a brut-labeled wine and taste the combination before serving. Elderflower liqueur already supplies sweetness, so no additional syrup is included.

Never shake sparkling wine in a closed cocktail shaker. Add it only after shaking the still ingredients. Prepare pear garnishes close to service, since sliced pear can brown.

A Make-Ahead New Year’s Eve Cocktail for the Countdown

This party batch keeps single-serve proportions and lets you prep the still ingredients ahead of time. A measured addition of cold water approximates the dilution normally introduced by shaking, so you can pour the chilled base directly into glasses. Keep the sparkling wine separate and top each drink as you serve: the final glass gets fresh bubbles, and the reserve base stays ready for the next round. This recipe makes 25 cocktails, one per guest. For more than one round, scale to the number of drinks you plan to serve.

Yield: 25 cocktails.

Prep time: 20 minutes, including measuring, juicing, and preparing garnishes.

Chill time: At least 2 hours.

Total time: Approximately 2 hours 20 minutes, plus pouring at service.

Ingredients

  • 25 oz London Dry gin - (3⅛ cups/739 mL)

  • 12½ oz elderflower liqueur - (2 cups/370 mL)

  • 12½ oz pear nectar - (2 cups/370 mL)

  • 12½ oz fresh lemon juice - (2 cups/370 mL)

  • 12½ oz cold water - (2 cups/370 mL)

  • 62½ oz chilled brut sparkling wine, kept separate - (8 cups/1,848 mL)

  • 25 thin pear slices or lemon twists, for garnish.

  • Ice or ice buckets for chilling bottles; do not add ice to the prepared base.

Shopping summary: One 750 mL bottle of gin barely covers the recipe; allow extra for measuring losses or a trial drink. Buy at least 370 mL each of elderflower liqueur, pear nectar, and lemon juice. Three 750 mL bottles of sparkling wine provide the required 1.85 L with about 402 mL left over. This reserve isn't enough to make extra servings of the gin base.

Instructions

  • Stir the pear nectar well. Combine gin, elderflower liqueur, nectar, and fresh lemon juice in a clean, food-safe container of at least 3 L capacity.

  • Add 12½ fl oz cold water and stir. This is a starting dilution of ½ oz per drink; taste a small trial portion with the wine before committing to the full batch.

  • Cover and refrigerate for at least 2 hours. Chill the sparkling wine and serving glasses separately.

  • Stir the base gently before pouring and periodically during service, because pear solids may settle.

  • Measure 3 oz prepared base into each chilled glass.

  • Slowly add 2½ oz sparkling wine, stir gently once, and garnish. Serve promptly.

Batch Dilution and Service Notes

Mix the citrus-containing base on the day of your event for the freshest flavor. Keep reserve base refrigerated and bring out smaller pitchers as needed. Open sparkling wine bottles as needed, rather than opening all three at once. Avoid combining all the wine with the base in advance; a large open pitcher loses carbonation while it waits.

The cold water is a practical batching estimate, not an exact reproduction of every shake. If your trial drink calls for a different water amount, recalculate the prepared-base volume and divide by 25 to find the new portion. Do not shake the already diluted base over ice unless you intentionally want additional dilution.

Alternative for a bartender-led station: Omit the water, chill the 62½ fl oz undiluted base, shake 2½ oz per drink with ice, strain, and top with 2½ oz wine. This follows the single-serve method; do not use the 3 oz base portion for this alternative.

Mocktail Remix: Sparkling Pear Elderflower Midnight Toast

Sparkling Pear Elderflower Highball. Sparkling pear-lemon cocktail with ice and lemon twist on marble, surrounded by pear and lemon slices under warm festive lights

An Alcohol-Free Pear Mocktail with a Floral Finish

This sparkling pear elderflower mocktail keeps the cocktail’s soft fruit, fragrant floral notes, and bright lemon finish. Alcohol-free elderflower cordial replaces the liqueur, extra pear nectar adds body, and plain sparkling water supplies a crisp finish. It is a lighter, fruit-led remix rather than an exact gin substitute. Serve it in the same chilled glassware with the same garnish as the cocktail, so every guest has something beautiful to raise at midnight.

Yield: 1 mocktail.

Prep time: 5 minutes with chilled ingredients.

Measurement summary: 5 fl oz (approx. 148 mL) before shaking, plus dilution.

Glassware: Chilled flute, tulip glass, or coupe with at least 7–8 fl oz capacity.

Ingredients

  • 1½ oz pear nectar (approx. 44 mL).

  • ½ oz alcohol-free elderflower cordial or syrup (approx. 15 mL).

  • ½ oz fresh lemon juice (approx. 15 mL).

  • 2½ oz chilled plain sparkling water (approx. 74 mL).

  • Thin pear slice or lemon twist, for garnish.

  • Ice, for shaking.

Instructions

  • Stir or shake the pear nectar in its container before measuring.

  • Add pear nectar, alcohol-free elderflower cordial, and lemon juice to a shaker with ice.

  • Shake for 10–15 seconds, then fine-strain into a chilled glass.

  • Slowly top with sparkling water and stir gently once.

  • Garnish with pear or lemon and serve immediately.

Use an elderflower product confirmed to be alcohol-free; the word “cordial” can refer to different products. Cordials and concentrated syrups vary in sweetness, so test your chosen product and reduce it slightly if needed. Plain sparkling water is the default here because sparkling grape juice would add more sweetness. Never shake the carbonated ingredient.

Cocktail and Food Pairings for New Year’s Eve

Savory Party Bites for a Pear Elderflower French 75

This cocktail pairs especially well with appetizers that balance creamy, salty, and crisp textures. Brie and pear crostini echo the fruit in the glass, while toasted bread adds a satisfying crunch. Goat cheese tartlets with thyme create a tangy, herbal pairing that connects with the gin’s botanicals. For a more savory direction, try smoked salmon cucumber bites with lemon and dill: the drink’s fresh citrus and bubbles provide a bright counterpoint to the salmon’s richness.

For a warm midnight-party spread, serve mushroom puff pastry bites or mini crab cakes with lemon aioli. Their earthy or savory flavors give the floral cocktail something substantial to play against without overwhelming it. Keep sauces and seasonings balanced so the delicate pear remains noticeable. Guests choosing the mocktail can enjoy these same pairings; its lemon and carbonation offer a similar refreshing lift.

A Light Dessert to Finish the Celebration

If your gathering ends with something sweet, offer pear almond tart or a small lemon shortbread alongside a smaller pour. These desserts echo the fruit and citrus without needing a second elaborate drink. Very sweet frostings or heavy chocolate desserts may make the dry, sparkling finish seem sharper by comparison, so I choose lighter pastries for this cocktail.

Raise a Glass to a Fresh Start: A New Year’s Eve Toast

The best midnight toast is about the people holding the glasses: the ones who made the past year brighter, helped you through the hard parts, and will be there for whatever comes next. This Pear Elderflower French 75 adds elegance to the moment, with soft pear, fragrant elderflower, fresh lemon, and celebratory bubbles. It feels special without requiring you to spend the entire party behind a shaker.

Prepare your base, chill your bottles, and serve the sparkling mocktail with the same care. Then gather everyone close and make room for a toast that feels like you: “To what we learned, what we’re leaving behind, and the good things we’re making room for.” The countdown is short; the memories deserve a little longer.
