The History of Women in Mixology
While cocktail history is often told through the stories of famous male bartenders, women have played an equally important role in shaping the world of spirits, distilling, and cocktail culture.
One of the earliest influential figures was Ada Coleman, head bartender at the American Bar at The Savoy Hotel in London in the early 1900s. Known affectionately as “Coley,” she was one of the first widely recognized female bartenders in modern cocktail history. Coleman created the legendary Hanky Panky cocktail, a drink made with gin, sweet vermouth, and Fernet-Branca that remains a staple in cocktail bars around the world.

One of the most respected distillers in Scotch whisky history was Bessie Williamson. Beginning her career as a secretary at the Laphroaig Distillery in Scotland, Williamson eventually became the distillery manager and later the owner. At a time when women rarely held leadership positions in whisky production, she played a pivotal role in bringing Laphroaig to international markets and preserving the distillery’s distinctive style.
Another influential figure is Joy Spence, the first woman to become a master blender in the spirits industry. As the master blender for Appleton Estate rum in Jamaica, Spence has overseen the creation of some of the world’s most celebrated aged rums. Her expertise in aroma, aging, and blending has helped redefine rum's perception as a complex, premium spirit.
In the tequila world, women are also leading the way.
One standout example is La Gritona Tequila, a tequila distillery in Jalisco, Mexico, owned and operated by Melly Barajas. La Gritona is unique not only for its smooth, approachable reposado tequila but also for its all-female production team. Barajas founded the brand with a mission to create opportunities for women in an industry traditionally dominated by men. From distillation to bottling, women lead every step of the production process. The tequila itself is made with traditional methods and packaged in hand-blown, recycled-glass bottles that have become instantly recognizable behind bars and on cocktail menus.

Figures like Audrey Saunders helped revive classic cocktail techniques and bring historical recipes back into modern bars. Saunders’ work at New York’s Pegu Club helped spark the global craft cocktail renaissance that continues today.
