This cocktail celebrates the communal spirit of rum — layered, vibrant, and meant to be shared. It balances richness with brightness, honoring Caribbean heritage and rhythmic joy.
Ingredients:
1.5 oz aged dark rum
0.5 oz fresh lime juice
0.5 oz pineapple juice
0.25 oz spiced demerara syrup
2 dashes aromatic bitters
Directions:
Add all ingredients to a shaker with ice.
Shake until well chilled.
Strain into a rocks glass over a large cube or fresh ice.
Garnish with a mint leaf, lime wheel, and pineapple slice.
Batched Recipe (Up to 25 Servings)
Includes ~20% dilution for easy pour service
Ingredients:
37.5 oz aged dark rum (≈ 4.7 cups)
12.5 oz fresh lime juice (≈ 1.6 cups)
12.5 oz pineapple juice (≈ 1.6 cups)
6.25 oz spiced demerara syrup (≈ ¾ cup)
50 dashes aromatic bitters (≈ 2.5 oz)
15 oz filtered water (≈ 1.9 cups)
Batching Instructions:
Combine all ingredients in a sealed container or beverage dispenser.
Stir gently to integrate.
Chill for at least 2–4 hours before service.
Serve over ice and garnish as desired.
